By my count, that's nine actors who've portrayed Spock in canon productions. That's got to be a record.

I don't know why they don't explore the pre-TOS period between the 1964 pilot with Captain Pike and the "Where No Man Has Gone Before" TOS pilot?? This would allow them a clean sheet. They could also have an attempt to clean up some of the huge series continuity errors tha ENT has with TOS, TNG and DS9.
Maybe explore a younger Kirk's stint on the Republic or follow some of the other principle character's careers.
Maybe just set a series in the Daedalus period. There is enough space in the early Trek timeline for interesting new series.

heck, they could do one in the 78 years between the first and second parts of Generations. There's minimal history in there.

They could have just followed another ship and crew in the TOS period.
