MS Outlook- How do I ask for receipt on an email?

The subject pretty much says is all.  I found a way under Tools>options to ask for receipt of email on what looks to be all outgoing email, but I woulld really liek to find an option so I can just turn it on easily for one email every once in a while.  IMportant to note- we are using MS Word to edit messages, this is Office 2003.  ANy insight would be very helpful, Thanks

To be notified about a single message

In the message, click Options.

Under Voting and tracking options, select the Request a delivery receipt for this message or the Request a read receipt for this message check box.
