You get the right type of tomato (indeterminant) and there are many varieties that are indeterminant they will produce until the first heavy frost. the other plants produce one batch and are pretty much done for the year. My plants in Austin were planted late, and the average high has been 100 for July (103 some days in July and Aug), so no tomatoes for me unless I buy! In Mexico the little cherry ones I planted in spring are producing like a mo/fo.

There are also cultivars of tomatoes that do not ever turn red they stay green and are bred specifically for frying.

Hey Jerry, did you ever join the arbor day Foundation? They have a good thing going on as an aside, The conservation Tree program. They will send you 5 Crypemyrtles for 10 bucks. The latest Magazine/Newsletter discusses how alot of trees helped a few Villages in India survive the flood waters there. apparently there conservation of Trees helped hold the flood waters back substantialy where more barren places got swamped.
