I usually start on Sundays.  The reason being that that makes it end on a Sunday at noon also, allowing the last hectic two days of the server to be on the weekend for maximum attenance.

I scheduled more staff in the store so I could take the day off.
I know it would be a shame if I did that and we started on Sunday....
