 TexMex. Mexican food Texan style.  How it differs from regular Mexican food I couldn't say. My cooking skills are generally limited to making pizzas.

One thing, though. If anyone mistakes fajitas as *Mexican I will slap them upside the head. I know those greedy Mexicans want to take credit for the finest dish ever, but fajitas are a solely Texan invention.

Actually, Fajita's are the textbook example of Tex-Mex.  Food invented in Texas or seasoned with a more chili-like flavor, but with a Mexican Flair.  Most American Mexican restaurant (El Chico, Chi-Chi's, etc...) chain's are actually serving a more Tex-Mex menu.  True mexican food is substantially more bland than what most people are used to.  

With that said, If you really want to set your mouth on fire, try some New Mexican (the state) food.

More pepper than traditional Mexican food, and often the meat is cooked with mesquite wood.. also, the dishes are a bit different. The Chimmichanga (sic) is an example.
