The local fire dept. that I am a member of holds a pancake breakfast once a month. We serve maple syrup and/or blueberry sauce to go with the pancakes. The problem is that the boredom factor is setting in and we need to start rotating the the pancake toppings.  Does anybody have any ideas? We are thinking of maybe using apples, strawberries or bananas but would consider anything.

I know this won't help but my mum used to make this really awesome mango syrup.  mmmmmmm She also did her own canning and jelly making.  The funny thing is she is alergic to mangos!  

Gosh I wish I was little again so that I can sit in my neighbor's tree and eat fruit till I come home sick!

Personaly, I've always liked fresh strawberries , blackberries or raseberries on my Pancakes, But that might be cost prohibitive for a firestation.

Things you can add to pancakes to spice them up - These go into the batter before cooking and most require them to be very well chopped up, but not pureed. Most can also be used as sauce topping ingredients or as whole fruit toppings:

Bananas

Blueberries

Strawberries

Raspberries

Blackberries

Boysenberries

Pears

Applesauce

Chocolate Chips

Beer

You can also make "Silver Dollar" pancakes and top them with powdered sugar. Whipped cream also makes a good topping. You could get really crazy and try caramel or butterscotch sauce, but I don't want to be held responsible!

Personally, This Methane breathing Ferret takes the remains of a
Lyran Captain after a fun battle in which I Chop the body, roll in
Powdered Sugar and serve with Starwberries on my Flap Jacks.

Thanks for all of the replies. I have gotten some good ideas out of this. One thing I should clarify is that we serve 300 - 400 plates in a morning. Also the flippers do not want to have anything other than plain batter on the grill. I need something that can be added at the table. I am already looking for 20 - 30 shakers so we can add powdered sugar to the menu.
