Oh...sorry, wrong games...

I mean...perhaps you should look into one of the games along the Street Fighter series...not much into games for the computer in the fighting genre...but I beleive the SF series doesn't have much blood or guts.

Going back a few years, I'd say One Must Fall: 2097.
The only things flying around are scrap metal.

Ok, let me explain.

My seven year old daughter likes playing video fighting games (hand to hand).  I would like to buy her one, HOWEVER, I still would like it to be "pretend" looking.  Meaning I don't want to see blood, guts, and body parts flying all over the place.  But, I would like decent graphics.

Do you have any recommendations?

Yeah, I'm surprised at myself wanting to get her this.  <sigh>

My 8 year old nephew really likes the Dragon Ball Z fighting games, and from the little that I have seen they don't look gory. I'm pretty sure that they're available for all of the consoles as well.

 Soul Calibur has no blood or guts per say... but they do attack each other with bladed weapons and the females could do with some clothes less they get frostbite. I am not sure if there is a more kid friendly fighting game... while almost all violent fighting games have the option for you turn the gore and blood off, they are still designed for teenage boys.

Perhaps the best fighting game suited for a seven-year-old girl would be Super Smash Bros 2 for the Gamecube. While not a true fighting game in the upmost sense (only a limited amount of "moves" you can do), its very fun and there is plenty to do. It is good natured and innocent. Excellent graphics.

Best fighting game ever IMO is Oni.... BUT that isn't exactly A: Console, and B: Kid friendly. Not kid unfriendly, either, it's just that it's probably not fun for a kid. Got a mixed reception but it's the game I've roudned the most times.

I'd suggest Dragonball Z or some other cartoon - like fighting game; VF, Tekken etc seem to, while not including visceral graphics, they certainly include visceral SOUND, but of the two VF4: Evolutions is probably better. One to stay away from is Mortal Kombat. Cartoony, yes, but gruesome.
