Well, you can use Shipedit for that, but if you want to just replace a stock model, rename the model you want to the same as the one you're replacing, along with the folder it's in, then replace the folder with the stock model with your new model. Hope this helps...and sorry, I'm still figuring out Shipedit myself.

The "Hooch" (beer?  wine?  Scotch? moonshine??) part, I suppose.

Anyway, I REALLY place them in manually; I open the .zip or .rar compressed model file, open a window to my SFC game's model directory, backup the old model with a new directory (folder) in the original directory and then decompress the compressed files into the original directory.  Then I go to either the sfbspc13.txt or shiplist.txt file and change the .mod file's name in the appropriate slots in them (then saving it in both the assets and metassets directories in the case of EAW or OP).
