Hehe, the long standing Joke for at least three Generations of us men in our family, well, My Great grandfather, My grandfather , and me, Is The stuffing always needs more Sage.

Every year It's abit different. One year my wife ran out of Bread Crumbs, so she Used GrapeNuts cereal for the body, and It was surprisingly good.

I have an aunt though who puts Oysters in hers, and I politly eat a very small serving. I'llhave to look up my recipe, But generaly, after the basics breading(ie Corn Bread, etc.) I just season to taste, as the broth from every turkey seems abit different to me. Also, I very rarely actually stuff the Turkey , It just seems to take up alot of time, Instead , I just use some of the Juice from around the bird.

I know this sounds crazy,  but give it a test drive first.

Mix some Bisquik buiscuit mix in with water (enough water to start the clumping process) spread the large crumblies over a baking pan,  but mix all the flour mix until flour is gone,  usually a 1 cup mix to 1/3 cup water or close,  season with whatever the hell you want too.  IE oregano,  crushed pepper,  hand hammered peppercorns,  garlic and onion,  whatever floats your tasteboats, er tastebuds. Give the mixture a couple hours 'proofing' time.  Insert into the victim bird,  and bake as normal.  It should come out crusty,  but not burnt or tasteless.  Use your imagination my brutha.
