So if you make any what goes into your meatloaf?.

I know how to make it just need some differant Ideas.

Depending on how you prepare it,  add a Bay leaf or two to the burger as it cooks.  And if you like spicy,  throw some fresh cracked ground pepper into the fray.  The easiest way to do this is to take peppercorns,, put them in a plastic baggie,, and smack the hell out of them with a rolling pin or a mallet,  whichever is more handy.  Quick and painless for the peppercorns anyway.  A touch of chipoltle peppers in adobo sauce may help, but be warned, it's spicy.

Never forget the tomato sauce on top (or, when I collected Gov't wages, ketchup)

I sautee some onions to add with the mix, use some bread crumbs to bulk it up, and if feeling vaguely vegetarion, some shredded carrots.

I agree on the sauce. If you take a tomato puree-based sauce or ketchup and add to it a bit of salt, some vinegar, and brown sugar, you get a more deeply flavored sauce that matches well with the meatloaf IMHO.

This may sound crazy but with my rep nothing to lose,try cooking it for 75% of the required time let it cool then finish it off.it helps the flavor come out.

Well Im makeing the loaf now. But I cheated on the spices I use Mcormic brand meatloaf Seasoning, and crackers instead of bread crumbs. And so far I have not made myself sick from eating my own cooking.

I use hamburger and ground turkey.   I also use oatmeal flakes (trust me here)  as a binder.   Chop up some green peppers.  Maybe some yellow ones if you want a little sweetness.   Cumin.  Crushed Red Peppers.  Some Worchestershrestchestershire  (sp???? LOL)  Sage.   chopped onion.  Maybe some BBQ sauce on top while it's cooking.

My standard:

Ground pork AND ground beef, mixed together.  About 1/3 pork to 2/3 beef.

Chopped Onion

Pepper.  Cracked peppercorn.  I use the bottom of a skillet to crack them - leaves rather large chunks that work well.

Chili Powder

Garlic Powder

Cheyenne Pepper

OH MAN!!!    I'm like soo hungry right now.    <sniff>  I was stupid enough to have a salad for lunch and I have to work late.   ARRRGGH!!!  I love spicy food too.   My personal standard is for the entire house to be serenaded bright and early in the morning with the following chorus from the bathroom:

OH LORD WHY DID I EAT THAT!!!!   OUCH!! OOOOCH!!!  YIKES!!!!   HELP ME LORD!!!   IT'S ON FIRE!!!!   HELP!!!!!   OH LORD WHY!!!  I'LL NEVER EAT THAT AGAIN!!!   DOESN'T THIS DAMN SHOWER GET ANY COLDER!!!!!   ARRRGGGHHHHH!!!!

Now that's when you know you had a good din din.

Hey, Khalee,

Seeing how you like to get quick recipes sometimes:

I was home today, and thought, "Well, I can get stuff done for tomorrow!"  Then one of my kids decides he's too sick to go to school (well, he WAS sick... I'll give him that much), so I had to also look after him as well.  Since it was his stomach ailing him, I wasn't going to give him the usual Daddy fare- hot dogs, pizza, yeah, Ramen, too, burgers, fries, etc.

I figured, hey, sick = chicken soup, but knowing his picky self, he might not go for a can of Campbell's.  So, I threw together a can of stewed tomatoes, chicken broth, about a half or three quarter can of water, about five or six handfuls each of frozen corn and frozen peas, with some chopped white onions the only fresh ingredient I put in, and boiled the thing up.  No condiments; those picky guys could smell a grain of ground pepper a mile away.  I let it simmer about a half hour, woke him up from his "I-got-out-of-school-today" triumphant nap and served it to him for lunch.  He loved it!

When my other one got home after school, he wanted "something good" (not soup; probably dogs, pizza, Ramen, burgs, fries... I wonder what my wife serves 'em!)  but he liked it too!  Both had seconds.   I think it was the onions...

Plenty of good suggestions for meatloaf here. However, one must not forget that it is important to serve the appropriate drink with the meal.

Since many require a tomato base, you should serve a Bloddy Awful with it. What, you don't know what a Bloddy Awful is? Vodka and katsup.

I would suggest Warsteiner Dunkel (double bock) (homer simpson voice((Ummm,,,  Beer)).  If you like mixed drinks,  Major Peters bloody mary mix is good,  add a dash or 5 of McIlhennys tobasco with garlic and garnish with celery stick. Although, V8 hot and spicy with vodka and a dash of lemon and garnish of celery would be good as well.

Regarding recipies: It's pretty important that it has some sort of meat in it.  I am pretty sure of that.

On a tangent:  I just read that the singer Meat Loaf colllapsed on stage yesterday....

Cooked at too high a temp and exposed to cold air.  OK not funny.  I'm going to try a meatloaf with cubed instead of ground meat.  What it boils down too,  is the loaf pan itself.  You can dump anything in there you want and cook it. Creativity is key in cooking,  especially for oneself.  Just remember salt (kosher if possible, or seasalt) and pepper(freshly ground or hand cracked) are the key ingredients to the next level.
