Fast & Yummy II : Pesto Pasta

Carb Overload here (so I don't make this anymore):


Recipe I: Chicken Pesto Pasta

Get a jar of green pesto sauce.

Put a tablespoon of pesto into a fry pan, and cook some boneless skinless chicken breasts in it.

Chop up a red bell pepper and a red onion.

Remove the chicken from the pan, and toss the bell pepper and onion into the pan.  Add another tablespoon of the pesto.

While the veggies are cooking, cut the chicken into bite-sized pieces and then add it back into the pan with the veggies.

Boil your pasta (I prefer penne, but pick what you like).

Drain pasta, rinse with cold water (so it stops cooking), then mix the veggie/chicken mix in, as well as the remainder of the pesto.


Recipe II: Sausage Pesto

Replace the chicken with a hot italian sausage.  Use the red pesto sauce instead of green.  Use a green bell pepper instead of red.  Use a yellow or white (not vadalia) onion instead of red.

In this version, you don't cook the sausage in the pesto, but instead use 2 tablespoons when you cook the bell pepper and onion (and eventually the cut sausage).


Serve up both with a salad, and either garlic bread, or soft french bread dipped in a mix of olive oil and italian spices & parmesean.
